Pumpkins: Not just for jack-o-lanterns
There’s more to pumpkin than carving Jack-O-Lanterns and making pies. See what more pumpkin has in store. Whip up this tasty pumpkin and white bean soup when the weather gets chilly. Made with unsweetened apple juice, pumpkin and pantry staples, it’s also just 140 calories a serving. Makes 6 servings.
Pumpkin and white bean soup
1 1/2 cups apple juice (unsweetened)
1 can small white beans (15 oz)
1 small onion (finely chopped)
1 cup water
1 can pumpkin (15 oz)
1/2 teaspoon cinnamon
1/8 teaspoon allspice (optional)
1/2 teaspoon black pepper
1/4 teaspoon salt
- In a bowl, combine white beans, onion and water. Mash with a fork or blend until smooth.
- In a large pot, add the pumpkin, apple juice, cinnamon, black pepper and nutmeg. Stir together.
- Stir the bean mix into the large pot.
- Over low heat, cook for 15-20 minutes, until warmed through.
