Today we celebrate a much overlooked but quite beloved holiday, #NationalGrilledCheese day. While they certainly should not be a weekly lunch staple, grilled cheese sandwiches can transport us to memories of sunshine filled days playing outdoors under the sprinklers or beneath a summer hose.

So in celebration, we’re sharing a few of our favorite grilled cheese recipes, modified of course to account for our now refined adult tastes.

Chef DeJuan’s Smoked Salmon Grilled Cheese 

Serves 3.

  • 1/2 smoked Salmon
  • ½ cup mozzarella cheese
  • 2 tbsp. Boursin cheese
  • 6 slices whole grain or wheat bread
  • 2 tbsp. unsalted butter.  

Start by mixing the Boursin cheese with the shredded mozzarella cheese. Spread the cheese mixture thinly on both sides of the bread then place equal amounts smoked salmon to make the sandwich. Melt the butter in a medium sauté pan and then brown the grilled cheese sandwiches on both sides until crispy and golden brown.   

Fig and Brie Dessert Grilled Cheese

Serves 4

  • 4 generous ounces of Brie
  • 4 tbsp. Fig Spread
  • 2 slices whole grain or wheat bread
  • 2 tbsp. unsalted butter.

Cut your brie vertically so as to have long thick strips. Spread the fig spread on both slices of bread. Place the brie over the fig spread. Melt the butter in a medium sauté pan and then brown the sandwich on both sides until crispy and golden brown. Cut into four pieces. Enjoy.
